Summertime Mung Bean Shortbread Cookies

This is a good summertime recipe because Mung Beans are fantastic and preventing summer time sicknesses associated with the draining effects of hot temperatures.  These cookies would be good to bring along with you when traveling to arid regions during the hot season, when summertime sickness is likely.  You can try substituting honey for the cane sugar to see if the cookies turn out to have more moisture, which might keep them fresh longer in cases where you want them to last during many days of far-away travels.  Experiment and enjoy these tasty treats while you stay healthy.

Mung Bean Pancakes

Mung beans clear heat (especially summer-heat) for thirst and irritibility and other symptoms of excess heat.  Mung beans also detoxify the body and can help clear out residues of pesticides stemming from eating too many non-organic foods.  The detoxification effects of mung beans can also treat the symptoms of food poisoning due to the consumption of spoiled food. Ingredients: 1 lb Dried Peeled Mung Beans 2 tsp Salt 1 cup of Chopped Shitake Mushrooms (optional) 1 cup of Chopped Scallions (optional) 1 lb Ground Beef or Pork or Chicken (optional) 1 cup of Kimchee (if you happened to have some for taste)
