Organic Chicken Soup with Herbs

Dried Red Jujubees 'Da Zao'

Ingredients:

  • One half of an organic chicken without skin, or 6 oz organic boneless, skinless chicken (If you can find a black chicken in an Asian market, that's the best!)
  • 5 pieces of dried Asian yam 'Shan Yao'
  • 3-5 slices of Reishi Mushroom 'Ling Zhi'
  • 2 Tbs of 'Xiao Xi' Wine

Nettle & Astragalus Soup (Huáng Qí 黃耆) to tonify Qi & Blood

Huang Qi - sticks

 Ingredients:

  • 1 lb Fresh Nettles (handle with gloves and tongs to avoid being stung)
  • 1 shallot minced
  • 2 leeks - cut into half moons
  • 2 cups broth, ideally home-made (vegetable or chicken)
  • 1 cup white wine
  • 1 avocado
  • 5 small potatoes
  • 9 grams dried Astralagus Sticks (Huáng Qí 黃耆) or 1 TBS dried Astragalus pieces
  • 1 tsp fresh dill
  • ½ tsp nutmeg (Ròu Dòu Kòu)
  • 3 cloves of freshly, minced garlic (Dà Suàn),

Seaweed Soup with Organic Beef Brisket

Seaweed is from the sea, and like the ocean, it is cooling in nature.  There are various types of seaweed, which can all detoxify the body by pulling heavy metals and toxins out of the body, like a natural chelation therapy.  Be sure to use good quality seaweed from a clean(ish) ocean. Cool seaweed can also transform hot-phelgm which is generally sticky and possibly yellow in color. Here's Grace's family recipe for seaweed soup.

  • 2 cups Yi Yi Ren (Job's Tears / Coix Seeds) - I had a heck of a time trying to find this and they were at Ranch 99 the whole time!

  • 4 carrots
  • 4 celery stalks
  • 1 large onion

Chicken Soup with Ginseng, Angelica & Ginger (Ren Shen, Dang Gui & Sheng Jiang)

THERAPEUTIC EFFECTS:

  • Angelica (dang-gui) head 當歸頭- 5-10gram  (too much will give the soup a bitter taste)

Miso Soup & Sea Vegetables

The sea vegetable in this soup is detoxifying and cleaning for the body.  Seaweed is 'cold' in nature and its main action is that of clearing heat and transforming phlegm nodules.  This action of reducing phlegm-heat is connected to seaweed ability to promote urination, which is an avenue to guide the hot-phlegm out of the body.  Both of these functions are cleaning and clearing in nature.  Modern research for seaweed has shown it has the ability to lower cholesterol (phlegm plaques), which is related to the cleaning action seaweed has on the body.  Further, seaweed can bind with heavy metals (such as mercury and lead) and guide them out of the body.  This last bit of modern research has prompted the use of various species of sea vegetables for detoxifying radioactive contamination.  Try to buy seaweed that comes from healthy seas, since seaweed detoxifies the oceans too and can absorb toxins from the ocean.
