Purple Yam and Goji Berry Pancakes

IMG_3282This Asian recipe uses the beautiful and unusual purple yam. We blend the smooth texture of the yam with sweet rice flour, and accent this with a sweet, nutty filling. The dessert also happens to be wheat-free, dairy-free, and vegan.  This purple yam is in the same botanical family (Dioscorea) as the white Asian yam 'Shan Yao'.

Udon with Soft Egg & Green Onion

Green OnionsThis nutritious soup is great for tonifying and detoxifying, and may be used therapeutically for a variety of conditions.

Ingredients

Dashi (Broth)
  • 1 ½ oz dried sardines
  • 2 dried shiitake mushrooms
  • 3-inch long piece of kombu seaweed
  • 1/3 cup mirin
  • 1 ½ oz dried bonito flakes
  • ¼ cup soy sauce
Soup
  • 4 large eggs
  • ¾ lbs udon noodles
  • ¼ cup very thinly sliced green onion
  • 3 cups udon broth
  • ¼ tsp. seven spice powder (shichimi taragashi*)

Nourishing Kidney Bean Soup with Goji Berries 枸杞子

Indian Cardamon Seed Pods & SeedsIngredients:
  • 1 cup Organic Dark Red Kidney Beans, soaked in water overnight (or three 15 oz. cans)
  • 4 cups water
  • 1/2 large yellow onion, chopped
  • 2 TB, chopped scallion (Cong Bai)
  • 1 TB minced garlic (Da Suan)
  • 1 TB olive oil
  • 1 TB butter
  • Ham Shank, (natural, uncured, fully cooked), cut bite-sized meat
  • ¼ C whole goji berries, (Gou Qi Zi 枸杞子)
  • 14 Green Cardamom pods (green Indian cardamon tastes best) slightly crack each pod.
  • 3 TB, fresh lemon juice
  • 1 tsp sea salt
  • ¾ tsp paprika
  • Pinch or so, cayenne pepper (Hua Jiao) – according to taste
